Holland America Ages Jefferson’s Bourbon on All 11 Ships
Before the deal, Jefferson’s had completed 35 Ocean voyages on cargo and fishing vessels; the Holland America program is its first cruise-line partnership.
Holland America Line and Jefferson's Bourbon have launched a fleetwide at-sea aging partnership that places one barrel of Jefferson's Ocean Bourbon on each of Holland America's 11 ships, in a program announced March 27, International Whiskey Day. Loading began in March 2026, and the rollout called for every vessel to carry its own barrel by the end of April. The program is Jefferson's first cruise-line partnership for its Ocean Aged at Sea series.
The barrels will remain onboard for at least six months before bottling, with each expected to produce about 150 to 300 bottles for service to cruise guests in 2027. For Holland America, the deal expands its Single Barrel Series and adds a bourbon to its America's 250th program.
Barrels will follow individual itineraries
Each barrel is tied to a ship and its route, so the maturation period can vary by temperature, vessel motion and sea air. The fleet visits nearly 400 ports in 114 countries. Holland America plans onboard educational tastings during the aging period to show guests how the itinerary affects the spirit.
"Aging bourbon aboard our ships and offering it exclusively back to guests later reflects our commitment to beverage programs that are shaped by the journey itself," said Drew Foulk, Holland America Line's director of food and beverage revenue and innovation.
Jefferson's brings ocean-aging experience to passenger ships
Jefferson's, founded in 1997 by Trey Zoeller and his father, Chet Zoeller, had completed 35 bottled voyages for its Ocean series on cargo and fishing vessels before this deal.
Zoeller said the cruise deployment gives Jefferson's a way to test how "different routes and voyages" affect the whiskey's taste, smell and mouthfeel. "The whiskey they enjoy will be exclusive to their ships, available only once the voyage is complete," he said.
Jefferson's joins a growing Single Barrel Series
The Jefferson's barrels bring onboard aging to a program that went from one Buffalo Trace bourbon barrel in 2024 to nine single barrels in 2025. For 2026, Holland America lists 13 bourbons and ryes for the Single Barrel Series in Ocean Bar across the fleet, including Weller Full Proof, Blanton's Private Barrel, Elijah Craig, WhistlePig and Knob Creek selections.
The eventual Jefferson's bottles will be offloaded and bottled, then returned to Holland America ships for guest tastings.
Part of a wider America's 250th lineup
Jefferson's is also one of the American brands in Holland America's America's 250th program. Other announced retail collaborations include Crane stationery cards designed by artists from the United States Veterans' Artists Alliance and a numbered Pendleton Woolen Mills Alaska-themed throw for ships sailing in Alaska in 2026.
The anniversary slate also includes a seven-day Stars and Stripes cruise scheduled to depart Boston on July 4, 2026, with Norfolk and an overnight in New York on the itinerary, plus a separate 28-day Pan Am 100th Anniversary Legendary Voyage planned for 2027. The Pan Am sailing is scheduled to call at 18 ports along the Great Circle Route across the Caribbean.
